Rocky team member Salina is back with this delightfully natural Canada 150 inspired treat! In her words:
Hi again Rocky fam! This year I have Canada-ized one of my favourite simple, healthy treats to bring to the table, picnic, float... or wherever you may be heading this Canada Day! With a creamy coconut milk base, delicately sweetened with a dash of local maple syrup this simple-to-prepare chia pudding brings all of the sensations of summer to the party. Layered with fresh mashed raspberries for a sweet tang and bringing our patriotic colours together, this is a treat to delight as much as this beautiful country does!

OH CANADA! RASPBERRY VEGAN PARFAIT
Makes: 4-5
Time: 10 minutes plus overnight to set
Vegan | Dairy-free | Gluten-free
INGREDIENTS
White Layer
800ml (2 tins) coconut milk
1/2 cup white chia seeds
2 Tbsp maple syrup
1/2 tsp pure vanilla extract
Red Layer
600gm fresh raspberries
2 Tbsp chia seeds, milled**
1 tsp maple syrup (optional)

METHOD
**Chia seeds can be bought already milled from any good health food store, or alternately, place 2 Tbsp of white chia seeds in a coffee grinder for a few moments until well ground.
