Raspberry Vegan Parfait

Rocky team member Salina is back with this delightfully natural Canada 150 inspired treat! In her words:

Hi again Rocky fam! This year I have Canada-ized one of my favourite simple, healthy treats to bring to the table, picnic, float... or wherever you may be heading this Canada Day! With a creamy coconut milk base, delicately sweetened with a dash of local maple syrup this simple-to-prepare chia pudding brings all of the sensations of summer to the party. Layered with fresh mashed raspberries for a sweet tang and bringing our patriotic colours together, this is a treat to delight as much as this beautiful country does!

Raspberry Vegan Parfait


Makes: 4-5
Time: 10 minutes plus overnight to set
Vegan | Dairy-free | Gluten-free


White Layer
800ml (2 tins) coconut milk
1/2 cup white chia seeds
2 Tbsp maple syrup
1/2 tsp pure vanilla extract

Red Layer
600gm fresh raspberries
2 Tbsp chia seeds, milled**
1 tsp maple syrup (optional)

Raspberry Vegan Parfait


  • Combine coconut milk, chia seeds, maple syrup and vanilla and whisk gently with a fork until there are no chia clumps.
  • Cover and set aside in the fridge.
  • Place the raspberries in a bowl and mash with a fork to a rough jammy consistency. Add milled chia seeds and maple syrup if using and mix together.
  • Cover and set aside in the fridge.
  • Check back on the mixtures about an hour later and give them another little whisk to ensure no chia has clumped together and return to the fridge for 3 hours or preferably overnight.
  • Layer the coconut chia into your glasses, alternating with layers of the raspberry.
  • Serve immediately or return to the fridge until ready to serve.

**Chia seeds can be bought already milled from any good health food store, or alternately, place 2 Tbsp of white chia seeds in a coffee grinder for a few moments until well ground.
